Chipsi Mayai (Fries with Eggs)

Another Tanzanian Favourite - you can get this dish in restaurants and on street stops... Amazing with coke (for breakfast). Egg to Potato ratio should be 2:1 Take 2 potatoes and cut them into wedges. Fry them in oil. When they are closer to done, scramble 4 eggs and add whatever spices you want (i.e. salt, chilli powder, black pepper, curry powder, etc.). Put butter in a frying pan and put half of the egg mixture to cover the bottom of the pan. Put potato wedges on top of the egg mixture. Once the bottom egg mixture is set, pour the balance of the egg mixture on top of the potato wedges and sprinkle with red chilli peppers or powder. Put the frying pan into the oven (warmed at 375 degrees) for the top layer to cook. Enjoy...
