Macho Ngombe - My mom's style

Another favourite. Ingredients:
  1. 2 eggs
  2. 1 small onion chopped
  3. Olive oil to fry eggs or magarine or Pam spray
  4. Seasonings - salt, black pepper, turmeric and red chilli powder to taste
  5. 1/2 tsp of garlic (optional)

Method:

  • In a frying pan, pour a little oil/margarine or spray with Pam.
  • Add onion and cook until clear
  • Add seasonings to taste
  • Distribute the onions in two portions and make a small space in the middle of each onion mound.
  • Break each egg on each mound.
  • Cook until done

If you want sunny side over, the flip the eggs when one side is done.
